Raw honey is honey as the bees made it: not pasteurised and not ultra-filtered, so it keeps its natural character. It is simply strained and jarred.
Crystallisation is natural for raw honey and is a sign it has not been heavily processed. It does not mean the honey has gone bad. To make it runny again, stand the closed jar in warm (not boiling) water and stir gently.
Keep the jar tightly closed at room temperature, away from direct sunlight and moisture. There is no need to refrigerate it, as the cold speeds up crystallisation. Always use a clean, dry spoon. Stored well, honey keeps for a very long time.
No. Honey, including raw honey, must not be given to babies under 12 months old because of the risk of infant botulism. It is safe for older children and adults.
